Meatfree Monday - Homemade pasta with Haloumi & Basil.

Another Monday, another meatfree.

And I'm really thoroughly enjoying them to be honest!

This dish is a winner, and once again, really simple to make.

You don't need to make your own pasta, of course shop bought will work (although if you can buy it fresh I would strongly advise - the difference between dry and fresh is amazing!)

For this one you'll need a block of haloumi, some fresh basil, half a punnet of cherry or Rosa tomatoes, an onion, garlic, and your salt & pepper.

Onion and garlic with olive oil.

Add chopped basil and tomatoes.

Add haloumi right at the end for roughly five minutes, until it has softened and coloured slightly.

Season.

Add cooked pasta to pan of ingredients, toss and gobble down with a glass of Pinot Grigio!

Mmm!
